Crème Brûlée is a classic French dessert that is a delicious custard that is topped with a crunchy caramel top. The name Crème Brûlée means “burnt cream” because of the caramelized sugar on top that is created with a quick torching.

Crème Brûlée is usually flavored with vanilla, but sometimes it has slightly different flavors. It’s very delicious and it has an amazing contrast between the smooth custard and the crispy sugar crust. It’s a fancy dessert, that is actually very simple to make!

This Crème Brûlée recipe is one of my favorites because it’s super easy to make and it tastes so delicious!! I love to make it for dessert for my family or friends – always everybody is very impressed with it!

It’s a show stopping dessert, because you can torch the sugar topping in front of the guests for entertainment (Just be careful!). This French dessert is definitely a must try for dessert lovers!

  • Heavy Cream: Gives the rich base for the custard. Use high quality heavy cream for the best results. I like to use heavy cream from the local farmers market.
  • Vanilla Bean: Adds an intense vanilla flavor You can also substitute with vanilla extract or vanilla bean paste.
  • Egg Yolks: Egg yolks are essential for the custard’s, because they make everything hold the shape. They should be fresh and at room temperature. Make sure that they are the highest quality, for the best results!
  • Granulated Sugar: We use whit granulated sugar in both the custard and for caramelizing the top. The sugar for the topping should be superfine, but you can also use granulated sugar, but make sure that it’s fully melted and caramelised, before serving.
  • Ramekins: Ramekins are small individual baking dishes that are perfect for the custard to cook evenly. Choose ramekins with a wide and shallow shape for more surface area to caramelize the sugar. You can also use oven safe bowls if you dont have ramekins.

Traditional Creme Brûlée Toppings

Classic Caramelized Sugar

For the perfect caramelized sugar topping:

  • Granulated Sugar: 1/4 cup

Sprinkle an even layer of sugar over the set custard. Use a kitchen torch to caramelize it until golden brown and crispy. If you prefer, place the ramekins under a broiler to melt and caramelize the sugar.

Vanilla Bean

For a rich vanilla flavor:

  • Vanilla Bean: 1 whole, split with seeds scraped

Add the vanilla seeds to the cream while it’s heating. This infuses the custard with a deeper vanilla flavor and adds a beautiful speckled look.

Fruit Compote

For a fruity addition:

  • Fresh Berries: 1 cup
  • Granulated Sugar: 1/4 cup
  • Lemon Juice: 1 tablespoon

How to Serve?

Straining Custard: After mixing the custard, i recommend to strain it through a mesh sieve. This will remove any cooked egg bits or vanilla bean pieces. It might seem like an extra step, but it actually really helps the consistency of the dessert.

Preventing Overbaking: Bake the Creme brûlées in a water bath to get even cooking. The water bath helps to regulate the temperature and keeps the edges from overcooking.

Variations and Substitutions

Chocolate Crème Brûlée: Add 3 ounces of melted dark chocolate (but milk chocolate and white chocolate work very well for a sweeter dessert too) to the custard mixture before baking. It’s a delicious twist on the classic dessert.

Citrus Version: Swich the vanilla bean with zest of one orange or lemon peels for a citrus flavor. Add the zest to the cream while heating it.
