Whether you are making German-style potato salad for the first time or looking for an easy bacon potato salad with a light vinegar dressing, this recipe is one you will want to make again and again.

Why You’ll Love This German Potato Salad

If you enjoy classic comfort food, this warm German Potato Salad is sure to become one of your favorite side dishes. The tender potatoes soak up the flavorful vinegar dressing while the crispy bacon adds the perfect smoky bite. Every forkful is full of simple, traditional flavors that work so well together.

Another reason I love this recipe is how easy it is to make. It uses just a handful of pantry staples, comes together in about 35 minutes, and is perfect for everything from weeknight dinners to holiday meals. Since it contains no mayonnaise, it is also a great choice for summer cookouts and potlucks.

One more reason I keep coming back to this recipe is how versatile it is. This traditional German potato salad tastes just as good at an Oktoberfest celebration as it does at a summer barbecue or a cozy family dinner. Since it is made without mayonnaise, it is also a great choice for picnics, potlucks, and outdoor gatherings.

There Are Many Types of German Potato Salad

One of the things I love most about German potato salad is that there is no single recipe. Germany has many regional versions of Kartoffelsalat, and almost every family has its own way of making it. Depending on where you travel, you may find a completely different German potato salad on the table.

In southern Germany, especially in Bavaria and Swabia, warm German potato salad is the most common style. These recipes are usually made without mayonnaise and are dressed with vinegar, bacon drippings, oil, or warm broth. The potatoes are often served warm or at room temperature, making this style perfect alongside schnitzel, bratwurst, roasted meats, and other hearty meals.

In northern Germany, German-style potato salad is often served cold and made with mayonnaise, pickles, eggs, and sometimes apples. It has a creamy texture that is quite different from the lighter southern versions.

This recipe follows the traditional southern style by combining tender potatoes with crispy bacon, onions, fresh parsley, and a tangy vinegar dressing. While every family prepares classic German potato salad a little differently, this recipe captures the warm, comforting flavors that have made Kartoffelsalat a favorite German side dish for generations.

What Is German Potato Salad?

German Potato Salad, called Kartoffelsalat in Germany, is a traditional side dish enjoyed throughout the country. Unlike American potato salad, many German versions are served warm and are dressed with vinegar, bacon, onions, and seasonings instead of mayonnaise.

Different regions have their own variations, but this warm Southern German style is one of the most popular. It is often served alongside schnitzel, bratwurst, roasted meats, and other hearty German dishes.

Today, you’ll find German Potato Salad served all across Germany, from family dinners to Oktoberfest celebrations. While recipes vary from region to region, this warm Southern German-inspired version remains one of the most popular because of its simple ingredients and bold, tangy flavor. It is a comforting German side dish that has been enjoyed for generations and is just as delicious for weeknight dinners as it is for special occasions.

Key Ingredients for German Potato Salad

2 pounds (900 g) waxy potatoes: Yukon Gold or new potatoes are the best choice because they stay firm after cooking and soak up the warm dressing without falling apart. Red potatoes also work well if that’s what you have.

6 slices bacon: Crispy bacon adds smoky flavor, while the rendered bacon fat becomes the base of the dressing. Pancetta or guanciale can also be used for a richer flavor.

½ cup (120 ml) white vinegar: This gives the salad its classic tangy taste. German herb vinegar, apple cider vinegar, or part white vinegar and part Meyer lemon juice are all great alternatives.

¼ cup (60 ml) water: Helps mellow the vinegar and creates enough dressing to coat every potato evenly. You can also replace it with vegetable or chicken broth for extra flavor.

¼ cup (50 g) granulated sugar: Balances the sharp vinegar without making the salad sweet. Feel free to adjust the amount slightly to suit your taste.

1 medium onion, finely chopped: Yellow or white onion gives the best flavor. If you prefer a milder taste, soak the chopped onion in cold water for about 10 minutes before cooking.

Salt and black pepper: Season to taste after mixing everything together, since the bacon already adds some saltiness.

2 tablespoons fresh parsley, chopped: Fresh parsley adds color and freshness. Chives also make a wonderful garnish.

Recipe Variations

One of the best things about German potato salad is how easy it is to customize while keeping its traditional flavor. Here are a few delicious ideas to try.

Make It More Traditional

For a flavor closer to a classic Swabian Kartoffelsalat, replace some or all of the water with warm beef or vegetable broth. The broth adds extra richness while keeping the dressing light and tangy.

Try German Herb Vinegar

If you can find German herb vinegar, it gives this vinegar potato salad an even more authentic flavor. I love using it whenever I can because it has a softer taste than regular white vinegar.

Add Dijon Mustard

Whisk a tablespoon of Dijon mustard into the warm dressing for a little extra depth. It blends beautifully with the bacon and vinegar without overpowering the potatoes.

Add Fresh Herbs

Fresh dill, chives, or extra parsley all work wonderfully in this traditional German potato salad. They add freshness and a little extra color.

Make It Vegetarian

Skip the bacon and use olive oil instead of bacon grease. A small pinch of smoked paprika adds a gentle smoky flavor that makes this German-style potato salad just as satisfying.

Add a Little Heat

If your family enjoys spicy food, stir in a pinch of red pepper flakes or a finely chopped jalapeño for a fun twist on this warm potato salad.

Tips for the Best German Potato Salad

  • Let the potatoes rest in the dressing: After mixing everything together, I like to let the salad sit for about 5 to 10 minutes before serving. The warm potatoes soak up more of the tangy vinegar dressing, making every bite even more flavorful.
  • Choose waxy potatoes: Yukon Gold or new potatoes are the best choice for this traditional German potato salad because they hold their shape after boiling. They stay tender without becoming mushy and absorb the dressing beautifully.
  • Don’t overcook the potatoes: Cook the potatoes until they are just fork tender. Overcooked potatoes can fall apart while mixing, making the salad too soft instead of giving it the classic texture of German Kartoffelsalat.
  • Mix while the potatoes are still warm: Warm potatoes absorb the bacon and vinegar dressing much better than cold potatoes. This simple step gives your warm German potato salad a richer, more balanced flavor.
  • Cook the bacon until crispy: Crispy bacon adds the perfect smoky crunch to this classic German potato salad. Be sure to save the bacon drippings because they are the secret to making a rich, flavorful dressing.
  • Use German herb vinegar if you can find it: Whenever I can, I use German herb vinegar instead of plain white vinegar. It has a softer, slightly milder flavor that gives this German-style potato salad an even more traditional taste.
  • Taste before serving: Every brand of vinegar is a little different, so I always taste the salad before serving. Add a little more salt, pepper, sugar, or vinegar until the flavors are perfectly balanced.
  • Finish with fresh parsley: Fresh parsley adds a bright, fresh flavor that balances the richness of the bacon. It also gives the finished potato salad a beautiful pop of color.
  • Serve it warm for the best flavor: While this German potato salad is delicious at room temperature or even cold, I think it tastes best while still slightly warm. The dressing is more fragrant, and the potatoes stay wonderfully tender.
  • Don’t be afraid to make it your own: Every family has its own version of Kartoffelsalat, and that’s part of what makes it so special. Feel free to adjust the sweetness, tanginess, or herbs to match your own taste while keeping the traditional flavors as the base.

Common Mistakes to Avoid

Even though this German potato salad recipe is simple, a few small mistakes can change the texture and flavor. These tips will help you make the best warm German potato salad every time.

  • Using starchy potatoes: Waxy potatoes like Yukon Gold or new potatoes hold their shape much better and create the perfect texture.
  • Overcooking the potatoes: Cook them until just fork tender. Potatoes that are too soft can fall apart while mixing.
  • Mixing too roughly: Stir gently so the potatoes stay whole instead of turning into mashed potatoes.
  • Skipping the bacon grease: The bacon drippings add incredible flavor and help create the rich dressing that makes this bacon potato salad so delicious.
  • Adding the dressing to cold potatoes: Warm potatoes soak up the dressing much better, giving every bite more flavor.
  • Not tasting before serving: Every vinegar is slightly different. Taste the salad and adjust the vinegar, sugar, salt, or pepper if needed.
  • Serving it straight from the refrigerator: This classic German potato salad is best served warm or at room temperature, when the flavors are at their richest.

Serving Suggestions

This warm German potato salad is one of the most popular German side dishes because it pairs well with so many hearty meals. I especially love serving it with crispy Classic Wiener Schnitzel, rich Jägerschnitzel, juicy Bratwurst with Sauerkraut, homemade Frikadellen, or a traditional German Schweinebraten (German Pork Roast). The tangy vinegar potato salad balances rich meats perfectly and adds freshness to every plate.

It is also a wonderful addition to an Oktoberfest menu, holiday dinners, backyard barbecues, or family gatherings. Since this German potato salad is made without mayonnaise, it is a great choice for potlucks and summer cookouts where it can sit out a little longer than creamy potato salads. If I’m hosting friends, this is almost always the German-style potato salad I choose because it goes with nearly everything.

Make-Ahead and Storage

Make Ahead: You can cook the potatoes and bacon a day ahead to save time. Store them separately in the refrigerator, then prepare the warm dressing and mix everything together before serving for the best texture.

Refrigerator: Store leftover German Potato Salad in an airtight container for up to 3 days. The potatoes may absorb more of the dressing as they sit, making the flavors even richer.

Reheating: Warm the salad gently in the microwave or in a skillet over low heat. Stir gently before serving and add a splash of water if the dressing becomes too thick.

Freezing: Freezing is not recommended because the potatoes can become grainy and lose their texture after thawing.

    • Thank you for the great tip 🙂 You are right, German herb vinegars like Salata or Hengstenberg make the salad taste even better. They are softer and give more flavor than plain vinegar. If you can find them, it is a good idea to use them 🙂

  1. Am German and make my potato salad exactly like that. But because I can never find German Vinegar, instead of all white vinegar, I substitute part Meyer lemon juice, which also gives it softer flavor…I do add chives, parsley and dill….can’t beat German potato salad…also, being sans Mayo, it’s safe to take to gatherings in the summer time!
