Description
This Italian Tartufo recipe is a luxurious frozen dessert! Filled with creamy gelato and coated in rich chocolate, it’s an easy and impressive way to end any meal.

Ice Cream Center:
- 1 pint vanilla ice cream
- 1 pint chocolate ice cream
- 4 maraschino cherries, soaked in 1/4 cup Amaretto liqueur
Chocolate Ganache Coating:
- 8 oz dark chocolate, finely chopped
- 1/2 cup heavy cream
Instructions
- Prepare the Cherry Center: Soak the cherries in Amaretto for at least 30 minutes.
- Form the Vanilla Core: Scoop out a small ball of vanilla ice cream, place a soaked cherry in the center, and cover it with more vanilla ice cream. Shape it into a ball and freeze for 1 hour.
- Add the Chocolate Layer: Take the vanilla ice cream ball and coat it with a layer of chocolate ice cream. Shape it into a smooth ball and freeze for 2 more hours.
- Make the Ganache: Heat the heavy cream in a small saucepan until it just starts to simmer. Remove from heat and pour it over the chopped dark chocolate. Stir until smooth and glossy.
- Coat the Tartufo: Once the ice cream balls are completely frozen, dip each one into the warm chocolate ganache, ensuring it’s fully covered. (You can also drizzle them with melted dark chocolate, wich will create a harder outer layer) Place back in the freezer to harden for at least 1 hour.
- Serve: When ready to serve, slice each tartufo in half to reveal the layers. Garnish with cocoa powder or extra cherries, if desired.
Notes
You can prepare the tartufo ahead of time and store it in the freezer until you’re ready to serve.
Be sure to let the tartufo sit for 5-10 minutes before cutting into it so that it softens slightly.
