Tartufo is a classic Italian frozen dessert. It’s very delicious and elegant. It’s made by wrapping ice cream around a center that is usually a cherry or a fruit compote, and coating the icecream it with chocolate or sometimes crumbs.
In this version I use an Amaretto soaked cherry with chocolate and vanilla ice cream that is then covered in a glossy chocolate ganache. It’s perfect for dinner parties or special occasions.

I love making tartufo because it looks super fancy but is actually pretty easy to make. The ice cream with the Amaretto cherry in the center is a fun and delicious surprise.
The chocolate ganache adds amazing chocolate flavor. It’s making it perfect for special occasions. And because it’s a dessert that you can make ahead, it’s an amazing choice when having guests.

Work Quickly: When working the ice cream, work very quickly to prevent it from melting. It helps to keep the dessert chilled between steps. You can always put the dessert in the freezer for about 15 minutes, if you see that is melting fast.
Use Good-Quality Chocolate: For the ganache use the best dark chocolate you can find. It makes a big difference in the final taste and even the texture.
Freeze Between Layers: After forming the ice cream balls i recommend to freeze them for at least an hour before adding the ganache. This helpst everything stay firm when assembly.
Use a Silicone Mold: If you’re new to making tartufo use a silicone mold that can make shaping the dessert much easier.

- Different Ice Cream Flavors: Feel free to switch up the flavors. Pistachio, coffee, or hazelnut ice cream can add an exciting twist to the dessert.

How to Store?

When you’re ready to serve, take them out of the freezer and let them soften slightly for 5-10 minutes before enjoying.
How to Serve?
This Tartufo is best served chilled, straight from the freezer. Once it’s ready, slice it in half to reveal the layers of vanilla and chocolate ice cream with the cherry center.
You can serve it with a drizzle of caramel sauce drizzle it with additional chocolate ganache a sprinkle of cocoa powder or a few cherries for garnish. It pairs wonderfully with a hot cup of espresso or an Italian dessert wine like Vin Santo.

Ingredients
Ice Cream Center:
- 1 pint vanilla ice cream
- 1 pint chocolate ice cream
- 4 maraschino cherries, soaked in 1/4 cup Amaretto liqueur
Chocolate Ganache Coating:
- 8 oz dark chocolate, finely chopped
- 1/2 cup heavy cream
Instructions
- Prepare the Cherry Center: Soak the cherries in Amaretto for at least 30 minutes.
- Form the Vanilla Core: Scoop out a small ball of vanilla ice cream, place a soaked cherry in the center, and cover it with more vanilla ice cream. Shape it into a ball and freeze for 1 hour.
- Add the Chocolate Layer: Take the vanilla ice cream ball and coat it with a layer of chocolate ice cream. Shape it into a smooth ball and freeze for 2 more hours.
- Make the Ganache: Heat the heavy cream in a small saucepan until it just starts to simmer. Remove from heat and pour it over the chopped dark chocolate. Stir until smooth and glossy.
- Coat the Tartufo: Once the ice cream balls are completely frozen, dip each one into the warm chocolate ganache, ensuring it’s fully covered. (You can also drizzle them with melted dark chocolate, wich will create a harder outer layer) Place back in the freezer to harden for at least 1 hour.
- Serve: When ready to serve, slice each tartufo in half to reveal the layers. Garnish with cocoa powder or extra cherries, if desired.
Notes
You can prepare the tartufo ahead of time and store it in the freezer until you’re ready to serve.
Be sure to let the tartufo sit for 5-10 minutes before cutting into it so that it softens slightly.
