Description

Light, comforting, and so easy to make, this Stracciatella Soup recipe is an Italian classic! Made with a simple egg mixture and flavorful broth, it’s perfect for a quick and delicious meal.

Ingredients

Units Scale
  • 4 cups chicken broth
  • 3 large eggs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1/8 tsp grated nutmeg
  • Salt and pepper to taste
  • 1 tsp lemon zest (optional)
  • fresh parsley (optional)

Instructions

  1. Heat the broth: In a large pot, bring 4 cups of chicken broth to a gentle simmer. Season with salt, pepper, and grated nutmeg.
  2. Whisk the eggs: In a bowl, whisk the eggs with grated Parmigiano-Reggiano and lemon zest (if using).
  3. Add the eggs: Slowly pour the egg mixture into the simmering broth while whisking gently to form egg ribbons.
  4. Serve: Taste for seasoning, adjust as needed, and serve immediately with extra Parmigiano-Reggiano, and fresh parsley.

Notes

For a vegetarian version, substitute the chicken broth with vegetable broth.

Add cooked pasta or tortellini for a heartier meal.

If you don’t have fresh nutmeg, you can omit it, but it adds a warm flavor that complements the eggs and cheese.
