Ingredients

Units Scale
  • 2 cups (250g) 00 flour
  • 3 eggs (for dough)
  • 2 cups (60g) fresh spinach
  • 1 cup (250g) ricotta cheese, drained
  • 1/2 cup (50g) grated Parmigiano Reggiano
  • 1 egg (for filling)
  • Pinch of nutmeg
  • Salt and pepper, to taste
  • 4 tbsp butter
  • 2 garlic cloves, minced
  • Fresh sage leaves

Instructions

  1. Prepare the Dough: Combine flour and eggs, knead until smooth, and let rest for 30 minutes.
  2. Make the Filling: Sauté spinach, then mix with ricotta, Parmigiano Reggiano, egg, nutmeg, salt, and pepper.
  3. Assemble Ravioli: Roll out dough, add filling, seal tightly, and cut into shapes.
  4. Cook and Serve: Boil ravioli for 3-4 minutes, then toss in a butter sauce with garlic and sage.

Notes

Make sure the ricotta is well-drained to prevent soggy ravioli.

Use a pasta machine for even, thin sheets of dough.

Freeze extra ravioli for a quick meal later.
