What Are Spekulatius?

Spekulatius are traditional German Christmas cookies. They have beautiful designs and a warm, spiced flavor. Usually I buy them in the store, during the Christmas season but honestly lately i made this recipe, and they taste a 100% better when homemade!

Similar to Dutch Spekulaas and Belgian Speculoos, these cookies have a spice blend, with cinnamon, cardamom, cloves, and nutmeg. They smell and taste delicious! They are very crunchy and crumbly – perfect for dunking in coffee or tea! They’re a holiday favorite in Germany and in my house. They are perfect for adding to a festive cookie platter or enjoying on their own.

Why I Love This Recipe?

Spekulatius cookies always are a fun way to spend an evening with the family. We love to make them in large batches, so that we can enjoy them during Christmas time, and gift them to family and friends. Watching them bake into golden, crispy cookies is such a treat!

What I love most about Spekulatius is how simple to make they are. Also, you can enjoy them plain, dusted with powdered sugar, or even dipped in chocolate for an extra touch. They’re the perfect holiday treat!

Key Ingredients & Substitutions for Spekulatius

All-Purpose Flour: Provides structure to the cookies. For a gluten-free version, use a 1:1 gluten-free flour blend. I recommend sifting the flour before using, to avoid any lumps.

Unsalted Butter: Creates a rich, tender dough. High-quality European-style butter is ideal for authentic flavor. I recommend using unsalted butter, but feel free to use any kind.

Baker’s Ammonia: Gives the cookies their crisp texture. You can substitute baking powder, but the texture will be slightly different.

Ground Spices: Cinnamon, cardamom, cloves, and nutmeg are essential for the classic Spekulatius flavor. Feel free to adjust the spice blend to your taste.

Vanilla Sugar: Adds a subtle sweetness and enhances the spices. If unavailable, use granulated sugar mixed with vanilla bean seeds or vanilla extract.

Brown Sugar: Provides a hint of molasses and complements the spices beautifully.

Equipment You’ll Need

  • Cookie Molds or Stamps: Traditional carved wooden molds create intricate designs, but cookie cutters work just as well.
  • Mixing Bowls: For preparing and combining the dough.
  • Rolling Pin: To roll out the dough evenly.
  • Baking Sheet: Lined with parchment paper for easy cleanup.
  • Cooling Rack: To cool the cookies evenly.

Step-by-Step Instructions for Perfect Spekulatius

Step 1: Prepare the Dough

  1. Mix Dry Ingredients: In a large bowl, combine 2 ½ cups (315g) all-purpose flour, 1 tsp baker’s ammonia (or baking powder), and 2 tsp ground cinnamon, ½ tsp ground cardamom, ¼ tsp ground cloves, and a pinch of nutmeg.
  2. Cream Butter and Sugar: In another bowl, beat 1 cup (225g) unsalted butter, ½ cup (100g) brown sugar, and ¼ cup (50g) vanilla sugar until light and fluffy.
  3. Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the butter mixture until a smooth dough forms.
  4. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 2 hours or overnight. Chilling helps the dough firm up, making it easier to work with.

Step 2: Shape the Cookies

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Roll and Mold: Roll out the dough on a lightly floured surface to about ¼ inch (6mm) thick. Press the dough into cookie molds or use cookie cutters to create shapes. Carefully transfer the cookies to a parchment-lined baking sheet.

Step 3: Bake and Cool

  1. Bake: Bake for 10-12 minutes, or until the edges are golden. Watch closely, as Spekulatius cookies bake quickly.
  2. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Expert Tips for the Best Spekulatius

Use Cold Dough: Chilled dough holds its shape better during baking, preserving the intricate designs.

Dust Molds with Flour: Lightly flour your cookie molds to prevent the dough from sticking.

Experiment with Spices: Adjust the spice blend to your preference or try adding a pinch of ginger for a twist.

Make Ahead: The dough can be refrigerated for up to 2 days, making it perfect for holiday prep.

Serving Suggestions

Spekulatius cookies are delicious on their own but pair wonderfully with mulled wine, spiced tea, or hot cocoa. They’re also a lovely addition to a Christmas cookie platter or as a base for cookie butter. For gifting, pack them in festive tins or cellophane bags tied with a ribbon.

Make-Ahead and Storage

  • Make-Ahead: Prepare and refrigerate the dough up to 2 days in advance or freeze it for up to 3 months.
  • Storage: Store baked cookies in an airtight container at room temperature for up to 3 weeks.
  • Freezing: Freeze baked cookies in a freezer-safe container for up to 3 months. Thaw at room temperature before serving.
