    • Hi! 😊 The recipe was developed using a whole chicken of about 3½–4 pounds (1.6–1.8 kg).

      A 6-pound chicken will work just fine, but I would increase the sauce ingredients by about 50% so you have enough to coat the larger amount of chicken. You don’t necessarily need to increase the herbs by quite that much—just adjust the salt and pepper to taste at the end.

      You may also need to add about 15–25 minutes to the cooking time, depending on the size of the pieces. The chicken is done when it reaches an internal temperature of 165°F (74°C).

  3. Wow! Great gravy created with this delicious dinner. I added a couple of carrots (cut in coins) and also green olives (near the end of cooking) and both notched this flavor up. I would watch the browning of the chicken (step #2) not to burn the skin (perhaps a bit lower heat?). Served the meal on polenta and it added a nice creaminess to the meal.
