Description

Garlic Butter Shrimp Scampi is a quick and easy shrimp recipe made with juicy shrimp in a garlic butter sauce with white wine and lemon. Perfect as a light meal or appetizer, this dish is ready in under 10 minutes!


Ingredients

  • 1 lb jumbo shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Zucchini noodles or pasta, for serving (optional)

Instructions

  1. Sauté Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp in a single layer and cook for 2 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Pour in the white wine and lemon juice, and bring to a simmer. Cook for 2-3 minutes, allowing the sauce to reduce slightly.
  3. Combine and Serve: Return the shrimp to the skillet, tossing them in the garlic butter sauce until they are well coated. Sprinkle with red pepper flakes, if using, and season with salt and pepper to taste. Garnish with fresh parsley and serve immediately over zucchini noodles or pasta.

Notes

For a non-alcoholic version, replace the white wine with chicken broth or vegetable broth.

Adjust the amount of red pepper flakes based on your heat preference.
