Description

This authentic fritto misto recipe combines crispy calamari, shrimp, and seasonal vegetables in a light Italian-style batter. The result is a golden platter of Italian fried seafood and vegetables that is perfect as an appetizer, main course, or special occasion dish.


Ingredients

– 1 pound (450g) calamari rings
– 12 ounces (340g) shrimp, peeled and deveined
– 2 medium zucchini, sliced
– 1 small fennel bulb, sliced
– 1 cup (150g) artichoke hearts, quartered
– 1 cup (125g) all-purpose flour
– 1 cup (130g) rice flour
– 1/2 cup (60g) cornstarch
– 1 teaspoon fine sea salt
– 1/2 teaspoon black pepper
– 1 cup (240ml) ice-cold sparkling water
– 6 cups (1.4L) vegetable oil
– 2 lemons, cut into wedges
– 1 cup lemon aioli


Instructions

1. Prepare the seafood. Thoroughly clean the calamari and shrimp under cold running water. Pat completely dry with paper towels. Moisture is one of the most common causes of splattering and poor coating adhesion.

2. Prepare the vegetables. Thinly slice the zucchini and fennel. Quarter the artichoke hearts into evenly sized pieces so they cook consistently.

3. Mix the dry coating. In a large bowl, whisk together the all-purpose flour, rice flour, cornstarch, salt, and black pepper until fully combined.

4. Create the batter. Gradually add the ice-cold sparkling water while whisking gently. The batter should remain light and slightly lumpy. Do not overmix.

5. Heat the oil. Pour the oil into a heavy pot and heat to 350°F (175°C). Use a thermometer to ensure accuracy throughout cooking.

6. Coat the vegetables. Dip the vegetables into the batter and allow excess batter to drip away before carefully lowering them into the oil.

7. Fry the vegetables. Cook for 2 to 3 minutes until lightly golden and crisp. Remove and place on a wire rack.

8. Coat the seafood. Dip the calamari and shrimp into the batter, ensuring an even but light coating.

9. Fry the seafood. Cook in small batches for 1 to 2 minutes until golden. Shrimp should be pink and opaque, while calamari should remain tender.

10. Season and serve. Arrange everything on a serving platter, sprinkle with sea salt, and serve immediately with lemon wedges and lemon aioli.

Notes

The key to exceptional fritto misto is temperature control. Keep the batter cold and the oil hot for the crispiest results. Fry seafood and vegetables separately because they cook at different speeds. Use the freshest seafood available, and always serve immediately after frying for the authentic Italian experience.
