Description

This Tomato Bruschetta is a great appetizer for any occasion! It has juicy tomatoes, fresh basil and garlic on a crispy toasted bread. It’s perfect for sharing and so simple to make!


Ingredients

  • 4 ripe tomatoes, diced
  • 1 baguette, sliced into 1/2-inch pieces
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the Tomato Mixture: In a bowl, combine the diced tomatoes, chopped basil, olive oil, and balsamic vinegar. Season with salt and pepper to taste. Let it sit for a few minutes to allow the flavors to meld.
  2. Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them for about 5 minutes, or until golden brown. Alternatively, grill the bread slices for a smoky flavor.
  3. Rub with Garlic: Once toasted, rub each bread slice with a clove of garlic. This adds a subtle garlic flavor to the bruschetta.
  4. Assemble: Spoon the tomato mixture onto each toasted bread slice. Drizzle with a little more olive oil if desired.
  5. Serve: Serve the bruschetta immediately while the bread is still warm and crispy.

Notes

Cheese Addition: Add a sprinkle of fresh mozzarella or Parmesan cheese on top for an extra layer of richness.
