- 1 1/2 cups Arborio rice
- 1 small onion, finely chopped (or shallot)
- 3 tablespoons unsalted butter, divided
- 1/2 cup dry white wine
- 4–5 cups chicken or vegetable broth, kept warm
- 1/4 teaspoon saffron threads, soaked in 2 tablespoons of warm water
- 1/2 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Instructions
- Prepare Soffritto: In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add Rice: Add the Arborio rice to the pan and cook, stirring frequently, until the rice is lightly toasted, about 2-3 minutes.
- Deglaze with Wine: Pour in the white wine and cook, stirring constantly, until the wine is fully absorbed by the rice.
- Cook Rice: Begin adding the warm broth one ladleful at a time, stirring frequently. Wait until each addition of broth is almost fully absorbed before adding the next. Continue until the rice is al dente and creamy, about 18-20 minutes.
- Add Saffron: Stir in the saffron and its soaking liquid, and cook for another 2-3 minutes.
- Mantecatura: Remove the pan from the heat and stir in the remaining tablespoon of butter and the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve: Serve the risotto immediately, garnished with extra Parmesan cheese if desired.
Notes
The key to a creamy risotto is to add the broth gradually and stir frequently to release the starch from the rice.
