Walnut Filling — Moisture Control Guide

This filling can be tricky: too dry and it crumbles, too wet and it oozes. The secret is to add liquid slowly and test as you go.

Start with 75% of the milk the recipe calls for. Stir until you get a spreadable paste. Do the spoon-trail test: drag a spoon through the filling—if the line holds for 2–3 seconds before closing, it’s perfect.

If it’s too wet, fold in 1–2 tablespoons of extra ground walnuts and let it rest 5 minutes. Coarse grinds need less liquid, fine grinds absorb more.

Orechový Závin Dough: Knead, Rise & Proof

Let it rise in a warm spot at 77–82°F (25–28°C) until doubled, about 1–1.5 hours. This is the bulk fermentation stage.

Before baking, shape the rolls and let them proof again for about 30 minutes. Use the poke test: press lightly with a finger; if it springs back slowly, it’s ready.

Roll, Seal & Shine

Roll the dough into a rectangle about 30 × 25 cm (12 × 10 in). Spread the walnut filling evenly, leaving a 2–3 cm (1 in) border.

Roll it up tightly, tuck the ends under, and place seam-side down on a parchment-lined pan. Prick the roll 3–5 times with a toothpick or skewer to let steam escape.

Bake Times & Doneness

Bake the orechový závin on the middle rack at 350°F (175°C) for 35–45 minutes. Rotate the pan halfway through.

The nut roll is done when it reaches an internal temperature of 195–200°F (90–93°C) in the center. If the top is browning too fast, tent it with foil.
