Key Ingredients & Substitutions for Mohnkuchen

Poppy Seed Filling (Mohnfix/Mohnback): Essential for the authentic poppy seed flavor. Mohnfix or Mohnback is a pre-made German poppy seed filling, but you can also make your own using poppy seeds and cream of wheat.

All-Purpose Flour: Forms the base of both the cake and the streusel topping. For a lighter texture, you can substitute with cake flour.

Butter: Adds richness to the cake and streusel. Ensure it’s at room temperature for easy mixing.

Baking Powder: Helps the cake rise to a light and fluffy texture.

Sugar: Sweetens the cake and streusel topping. Adjust the amount based on your preference.

Eggs: Provide structure to the cake. Use large eggs for best results.

Vanilla Extract: Enhances the flavor of the cake. Almond extract can also be used for a different twist.

Note: For a vegan version, substitute butter with a plant-based alternative and use a flax egg in place of regular eggs.

Tools You’ll Need

  • Springform Pan: For easy removal of the cake. A 9-inch springform pan works best.
  • Electric Mixer: For creaming butter and sugar.
  • Mixing Bowls: For preparing the batter, filling, and streusel topping.

Step-by-Step Instructions for Mohnkuchen

Prepare the Cake Base

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Cream Butter and Sugar: In a mixing bowl, cream together 1/2 cup (115g) butter and 1/2 cup (100g) sugar until light and fluffy.
  3. Add Eggs and Vanilla: Add 2 eggs one at a time, beating well after each addition. Mix in 1 teaspoon of vanilla extract.
  4. Add Dry Ingredients: In a separate bowl, combine 1 1/2 cups (190g) flour and 1 teaspoon baking powder. Gradually add to the wet mixture until just combined.

Prepare the Poppy Seed Filling

  1. In a saucepan, combine the ground poppy seeds, sugar, milk, and farina. Cook over low heat, stirring often, until the mixture becomes very thick, about 8–10 minutes. Stir in the butter until melted. Let the filling cool until warm before spreading it over the cake base.

Prepare the Streusel Topping

  1. Mix Ingredients: In a bowl, combine 1 cup (130g) flour, 1/2 cup (100g) sugar, and 1/4 cup (60g) cold butter. Rub the butter into the flour mixture with your fingers until it forms coarse crumbs.

Assemble and Bake

  1. Layer the Cake: Spread the cake batter evenly in the prepared pan. Spoon the poppy seed filling over the cake batter, then sprinkle the streusel topping evenly over the filling.
  2. Bake: Bake for 50–60 minutes, or until the streusel is golden and the filling is set. If the top browns too quickly, loosely cover it with foil for the last 10–15 minutes.
  3. Cool: Let the Mohnkuchen cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  1. I made this on 11-16-25 and it is really excellent. The only problem I have is that the picture in this post is highly inaccurate. It shows a thin, cake-like crust with a very thick layer of poppy filling. It’s actually the reverse. The cake crust actually is most of the kuchen, and the poppy filling is pretty thin. It still tastes great, but I don’t see a need to post a false picture.

    • Thank you so much! I’m really glad you enjoyed the cake. 😊 You made a great point about the filling. I’ve updated the recipe so it has a much thicker poppy seed layer to better match the photos. Thanks for taking the time to let me know!
