What are Crepes?

French crepes are very thin and flat large pancakes. They come from Brittany in northwest France. They are very soft, and very mild in flavor, wich makes them perfect to have with your favorite toppings! Now, people eat them everywhere all over the world!

Crepes are super easy to make and to make your own! You can fill them with Nutella and strawberries for sweet taste or ham and cheese for something salty.

Key Ingredients for Authentic French Crepes

Flour is the base of the crepe batter. Using all purpose flour gives you a smooth and light batter that makes the best tender crepes. Sift it through a sieve to avoid any lumps in the dough.

Whole milk adds richness to the batter and also makes the dough less thick. Feel free to use any milk alternatives or lactose free milk, if needed.

Eggs are essential for binding all of the ingredients together. Make sure to use fresh and good quality eggs for the best results!

Melted butter adds a flavor and helps prevent the crepes from sticking to the pan.

White granulated sugar in a small for sweetness ( if you are making sweet crepes). If you are planning on making savory crepes, add just a small pinch.

Salt is added to enhance the overall flavor of the crepes, balancing the sweetness. Trust me – you want to add it :D.

Finally, vanilla extract can be added for a pleasant aroma and extra flavor, especially in sweet crepes. It is optional, but it makes the SOO much better!

Expert Tips for the Best French Crepes

Rest the Batter: Resting the batter is very important. Letting the batter rest for at least 30 minutes allows the flour to fully absorb the liquid, wich gives a smoother consistency.

Thin Consistency: The batter should be thin almost like heavy cream. If it’s too thick add a little more milk until you reach the desired consistency.

Proper Heating: Using a non-stick skillet or crepe pan makes flipping the crepes much easier and prevents them from sticking. Make sure the pan is properly heated before adding the batter. Lightly grease the pan with butter or oil between each crepe to ensure they cook evenly and do not stick.

Even Cooking: When pouring the batter into the pan, swirl it around quickly to cover the bottom evenly. This ensures that the crepes cook evenly and have a uniform thickness.

Note! Usually the first crepe is a little greasy and imperfect, but the next batches will turn out perfect 😀

Variations and Substitutions

Buckwheat Crepes: Use buckwheat flour instead of all purpose flour for a gluten free option. Buckwheat crepes are traditional in Brittany and have a nutty flavor. You can also use a gluten flour mix.

Savory Crepes: Skip the sugar and vanilla extract for savory crepes. You can add some spiced like oregano, parsley, chives and salty cheese like parmesan or shredded cheddar into the batter.

Sweet Crepes: Add a tablespoon of cocoa powder to the batter for chocolate crepes. Fill with berries and whipped cream for a treat. You can also add some honey, or finely chopped fruit into the batter, for an original twist.

How To Serve?

Serving Suggestions: Serve these French crepes with your favorite fillings and toppings. For sweet crepes you can use jams, chocolate, Nutella, fresh fruit, whipped cream, and powdered sugar. Drizzle them with honey, chocolate syrup or maple syrup for extra sweetness.

Savory Options: For savory crepes, try ham, cheese, sauteed chicken, sautéed vegetables (i love spinach, mushrooms and onins), or smoked salmon. Fresh herbs like chives or parsley can add a lovely flavor to savory crepes.

Pairing: Crepes are perfect for breakfast, brunch, dessert, or even as a light dinner. Fold them in half or roll them up with your chosen fillings and enjoy. You can serve them with your favorite side dishes, or toppings.

How To Store Homemade Crepes?

Store any leftover French pancakes in an airtight container in the refrigerator for up to 3 days. Place a piece of parchment paper between each crepe to prevent them from sticking together.

To reheat, gently warm the crepes in a non-stick skillet over medium heat or in the microwave for a few seconds. You can also reheat them in a preheated oven at 300°F (150°C) for about 5 minutes, wrapping them in aluminum foil to keep them from drying out.
