What is Dampfnudel?

Dampfnudel is a traditional German steamed sweet yeast dumpling. It’s a dessert that originates from Bavaria and neighboring regions like Baden-Württemberg.

These dumplings are steamed in a pan with a little butter and milk. This is creating a fluffy top and a slightly crisp bottom. Dampfnudeln are typically enjoyed with a warm vanilla sauce, and they can be served as a dessert or a main meal. I love to serve them for breakfast on the weekends!

Why I Love This Recipe?

This recipe takes me back to my German roots, where Dampfnudeln were a staple at family gatherings.

The fluffy dough and the slightly caramelized base is simply very delicious. Plus, the vanilla sauce adds a rich creaminess that perfectly complements the dumplings. And the best part is that you can add your own favorite sauces or toppings, like fruit, or even apple sauce.

Whether I make them steamed or baked, Dampfnudeln are always a comforting treat that brings joy to any occasion. Let’s get cooking now!

Key Ingredients & Substitutions for Dampfnudel

All-Purpose Flour: Provides the base for the dough. Bread flour can be used for a slightly chewier texture.

Yeast: Active dry yeast gives the dumplings their rise. Fresh yeast can be used but may alter the rising time.

Milk: Adds moisture and richness to the dough. Whole milk is recommended for an authentic texture.

Butter: Essential for both the dough and the steaming process, adding flavor and richness.

Sugar: Provides sweetness to the dough and caramelizes in the pan.

Salt: Enhances the flavor of the dumplings.

Note: For a dairy-free option, substitute milk with almond or oat milk and use vegan butter.

Tools You’ll Need

  • Stand Mixer: Helps knead the dough evenly.
  • Large Skillet with Lid: For steaming the Dampfnudeln.
  • Baking Dish: Needed for the baked version.
  • Whisk: For the vanilla sauce.

Step-by-Step Instructions for Dampfnudel

Prepare the Dough

  1. Activate the Yeast: In a small bowl, combine warm milk (around 100°F or 38°C) with sugar and yeast. Let sit for 5-10 minutes until foamy.
  2. Mix the Dough: In a large mixing bowl or stand mixer, add the flour, salt, yeast mixture, and melted butter. Knead the dough until smooth and elastic, about 5-7 minutes.
  3. Let It Rise: Cover the dough and let it rise in a warm place for 1-2 hours or until it has doubled in size.

Shape and Prepare for Steaming

  1. Divide the Dough: Punch down the dough and divide it into 8 equal portions. Shape each piece into a ball.
  2. Prepare the Skillet: In a large skillet, add butter, a pinch of salt, and about 1/2 cup milk.
  3. Arrange the Dough Balls: Place the dough balls in the skillet, leaving some space for expansion. Cover with a lid and let rest for 15 minutes.

Steam the Dampfnudeln

  1. Steam the Dumplings: Place the skillet over medium heat and let the dumplings cook covered for 25-30 minutes. The milk will create steam, cooking the tops while the butter creates a caramelized base. Avoid lifting the lid during this time.
  2. Check for Doneness: The Dampfnudeln are ready when the tops are firm and the bottoms are golden brown and crisp.

Baked Version (Optional)

For a baked version, preheat the oven to 350°F (175°C). Arrange the dough balls in a greased baking dish, brush with melted butter, and cover with foil. Bake for 25-30 minutes, removing the foil in the last 5 minutes for a golden crust.

Vanilla Sauce (Vanillesoße)

Ingredients

  • 1 cup milk
  • 1/2 cup heavy cream
  • 3 egg yolks
  • 1/4 cup sugar
  • 1 vanilla bean (or 1 tsp vanilla extract)

Instructions

  1. Heat the Milk & Cream: In a saucepan, combine milk and cream. Split the vanilla bean, scrape the seeds, and add both to the saucepan. Heat until warm, but do not boil.
  2. Whisk the Egg Yolks & Sugar: In a separate bowl, whisk egg yolks with sugar until pale and creamy.
  3. Temper the Eggs: Slowly add a little warm milk mixture to the eggs, whisking constantly, then pour the egg mixture back into the saucepan.
  4. Cook Until Thickened: Cook over low heat, stirring constantly, until the sauce thickens slightly. Remove the vanilla bean before serving.

Expert Tips for Perfect Dampfnudel

Avoid Lifting the Lid: Keeping the lid on while steaming ensures the tops cook evenly and stay fluffy.

Use a Heavy-Bottomed Pan: This helps distribute heat evenly, preventing burnt bottoms.

Proofing Time: Allow enough time for the dough to rise fully; this gives the dumplings their soft texture.

Serving Suggestions

Dampfnudeln pair wonderfully with:

  • Warm Vanilla Sauce: A classic pairing that adds creamy sweetness.
  • Fruit Compote: Serve with plum or berry compote for a fruity contrast. You can also top the dumplings with Rote Grütze – German Red Berry Dessert.
  • Poppy Seeds: Sprinkle poppy seeds on top for added flavor and texture.

Make-Ahead and Storage

Make-Ahead: Dampfnudeln are best enjoyed fresh, but you can prepare the dough ahead and let it rise in the refrigerator overnight.

Storage: Store any leftovers in an airtight container in the fridge for up to 2 days.

Reheating: Reheat gently in a steamer or microwave, but note that the texture may change slightly.

  1. thank you for the recipe, I have tried making these a few times from a recipe in an old German cook book and could never get them right. My Mom/Grandma made them in bacon grease in bottom of pan and we covered them in canned plums/sauce…they also made beef gravy and poured that over the tops….they were sooooo delicious!

The combination of Dampfnudeln with plums and sauce is very traditional in some German regions, and serving them with beef gravy is another wonderful family variation.
