Description

Obatzda is a creamy German beer cheese spread made with Camembert or Brie, butter, onions, and spices. Perfect for serving with pretzels or rustic bread.

Ingredients

Units Scale
  • 8 oz (225g) Camembert or Brie cheese, well-aged (or a mix of the two types)
  • 4 tbsp unsalted butter, room temperature
  • 1 small onion, finely chopped
  • 1 tsp sweet paprika
  • 1/2 tsp caraway seeds
  • 2–3 tbsp wheat beer
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. Prepare the Cheese: Remove the rind from the Camembert or Brie and cut the cheese into small pieces.
  2. Mix Ingredients: In a mixing bowl, combine the cheese, butter, finely chopped onion, paprika, and caraway seeds. Mix until smooth and well combined.
  3. Add Beer: Gradually add the beer, one tablespoon at a time, until you reach the desired consistency. Season with salt and pepper to taste.
  4. Serve: Transfer the Obatzda to a serving dish and garnish with fresh chives. Serve immediately with pretzels or bread.

Notes

Adjust the amount of beer to achieve your preferred consistency.

For a smoother spread, use a food processor to blend the ingredients.

Let the Obatzda sit for an hour before serving to allow the flavors to meld.
